Ingredients:
1 small tomato chopped
1/3 C finely chopped onion
2 Tbsp water
2 Tbsp canola oil
4-5 Tsp lemon juice
1 tsp dried basil
1 small garlic clove minced
1/8 tsp salt
4 cod fillets (4 oz each)
1 tsp seafood seasoning
How to:
1. In a small bowl, combine the first nine ingredients
2. Place cod in an 11 x 7-inch baking dish and top with tomato mixture. Sprinkle with seafood seasoning.
3. Microwave, covered, on high for 5 to 6 minutes or until fish just begins to flake easily with a fork.
